Grow Your Own Soup: Carrot and Coriander with a Hint of Spring Onion

June can feel like a bit of a strange month in the garden. The rush of spring sowing has passed, and it’s easy to think you’ve missed your chance. But there are still plenty of useful seeds that do well this time of year — especially if you’re after something practical.
This month, we’re suggesting a classic: carrot and coriander soup, with a gentle touch of spring onion. And if you’ve got a few extra pots to spare, basil is also an excellent choice to sow now. All four can be started from seed in June, and they’re easy to manage in beds, borders or containers.
What to Grow in June
Carrots
Carrots just need loose soil and regular watering to get going. Once established, they more or less take care of themselves. Thin them early and keep the soil moist to help them grow straight and healthy.
Coriander
Fresh coriander has become surprisingly expensive in supermarkets, but it’s easy to grow from seed at home. It enjoys having both sun & shade and steady watering through the warmer weeks.
Spring Onion ‘White Lisbon’
This variety is quick to grow and doesn’t need much space. It adds a mild, savoury flavour when cooked, and works nicely in a range of dishes — including soup.
Basil (Sweet) Seeds
Best grown in warm, sheltered spots or on a sunny windowsill. Basil can be sown in June and will be ready to harvest in a matter of weeks. It’s brilliant for adding flavour to salads, pasta dishes, and anything fresh from the garden.
All of these can be sown in June. Together, they make a great little project for anyone who enjoys the idea of growing something useful and turning it into a proper meal.
How to Make Carrot and Coriander Soup
Ingredients
- 500g carrots, chopped
- 1 small bunch of spring onions, chopped
- A handful of fresh coriander, roughly chopped
- 1 tablespoon oil or butter
- 1 litre vegetable stock
- Salt and pepper to taste
Method
- Heat the oil or butter in a large pan. Gently cook the spring onions for a couple of minutes until softened.
- Add the chopped carrots and stir for a few minutes.
- Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer until the carrots are soft (around 20 minutes).
- Add the fresh coriander and blend until smooth.
- Season to taste and serve warm.
You can garnish with a few extra coriander leaves or keep it simple — it’s delicious either way.
A Homegrown Meal
It’s easy to overlook June when it comes to sowing, but there are still plenty of good options if you know what to look for. Carrots, coriander, spring onions, and basil all do well from seed this month and lead to something fresh, tasty and rewarding.
